Ingredients

 

• 200 grams zucchini
• handful of rocket
• spoonful of extra virgin olive oil or sesame oil
• pine nuts
• juice of half a lemon
• half of a banana (if you are willing to experiment)

Preparation

Thinly slice the zucchini, brush with oil and grill both sides on a grill-pan. Mix with washed rocket, lemon juice and oil, and sprinkle with toasted pine nuts. You can add banana slices to the mixture.
